EA decaffeination uses ethyl acetate, a naturally occurring ester found in bananas and also a by-product of fermented sugar, to remove caffeine from the beans. Colombian producers can produce EA decafs in-country and in smaller batches as opposed to water process which only occurs at two plants in the world in large batches.
